Spiced Chocolate Chip Cookie

Winter is great for spiced hot chocolate, chai latte, masala tea, mulled wine, and the list goes on with anything that makes you feel warm and cosy. But what if you can have spiced cookies with a hot cuppa of your choice while snuggling up under the blanket watching Netflix? Perfect.

At first I only had cravings for sea salt chocolate chip cookies. But my spice pantry was full of winter goodies (to standby for the festive season cooking) and it became a spontaneous recipe testing session to find the perfect balance of spice for these addictive cookies.

To be honest, I’m not a big cookie eater but this has got to be one of the best thing I’ve made for myself. It is slightly gooey in the centre and on the soft side. The amount of spice is not overpowering and it helps cut the sweetness from the cookie, giving it the right amount of taste balance. Sprinkle a small pinch of sea salt over the cookie for extra taste and crunch factor.

They are very easy to make and almost 100% foolproof. Best part of it all, it only takes about 20 minutes to make them! So the next time you need to do a last minute bake off for a gathering or a pot luck, this recipe will come up very handy for the occasion.

Spiced Chocolate Chip Cookies (Makes about 18 pieces)

128g flour
33g cocoa powder
2 tsp cinnamon powder
1/4 tsp nutmeg powder
1/4 tsp all spice powder
64g veg oil
96g brown sugar
1 egg
96g cocoa chips
1/2 tsp baking soda
1/2 tsp salt
1 tsp vanilla
  1.  Preheat oven at 175 degrees celsius. Sieve all dry ingredients together, leave aside.
  2. Beat vegetable oil, brown sugar, egg and vanilla together until evenly mixed. Add in all the dry ingredients and fold in the mixture carefully with a spatula. Continue folding until it has come into a sticky mixture. Fold in chocolate chips.
  3. Portion mixture equally onto baking tray using 2 spoons. Pop into the oven for 8mins. Leave to cool before devouring. (:
